Goat Milk Ice Cream

Tonight my husband is in Boise, ID buying a new truck so I took the opportunity to skip dinner and get right to cooking the best meal of the day: dessert! The first time I tried goat milk ice cream was last year at the King County Fair when our 4H leader tried to raise moral in the hot and sticky barn with an afternoon treat. It was so sweet and creamy that I knew goat milk ice cream would probably become my next addiction. I have been hoarding my milk after my first three days of milking ( my husband drinks it faster than I can milk it) and I finally have enough for ice cream. Below is a run down of my first attempt.

Day Before: If you are using an Ice Cream Maker you probably have to put the Double Wall Bowl in the freezer. As a rule of thumb I am terrible at planning ahead in the kitchen so this is the hardest part for me!

Step One: Heat 4 cups of goat milk, 1 cup of sugar and 3/4 teaspoon vanilla until sugar dissolves.

Step Two: Look up what the heck tempering egg yolks means.

Step Three: Beat and temper 4 egg yolks (unless you want scrambled egg ice cream) and add to the milk slowly.

Step Four: Feed the egg whites to your dog to make her coat nice and shiny.

Step Five: Stir over medium heat for about five minutes

Step Six: Place saucepan in the refrigerator and let the mixture cool completely. For me this took about one episode of Suburgatory while soaking in the bathtub with a cocktail (my guilty pleasure I sneak in when my husband is gone). Actually I have no idea how long it took but I figured that the mixture was bound to be cool by the time my bath water started getting cold and my cocktail was gone.

Step Seven: Figure out how to assemble your ice cream maker.

Step Eight: Pour mixture into your lime green ice cream maker. I swear lime green makes the ice cream taste better! I love my Cuisine Art Ice Cream Maker.

Step Nine: Wait for your mixture to turn into ice cream. Step Ten: Relax, enjoy and start brainstorming your future ice cream flavors!

THE VERDICT: The consistency of the ice cream was good. However, I think I added too much vanilla. I didn't actually measure it because we are the middle of moving and my teaspoons were already packed and I didn't feel like opening boxes to find them. Next time I will add less vanilla and probably add some strawberries or something.
